LONGAN and WALNUT MUFFIN

Ingredients :
200 gm all-purpose flour
2 tsp baking powder
2 eggs (A size)
80 gm brown sugar
120 gm corn oil or vegetable oil
120 gm fresh milk
80 gm natural yogurt
80 gm dried Longan, chopped (me : use dried cranberries)
80 gm walnut, chopped
Instructions :
1. Preheat oven to 190'C.
2. Fill muffin tin with paper liners, set aside.
3. Sift flour and baking powder in a mixing bowl.
4. Add egg, sugar, corn oil, milk and yogurt in another mixing bowl, whisk to combine and sugar is dissolved.
5. Add dry ingredients into wet ingredients and gently mix together. Do not over mix.
6. Fold in the chopped dried Longan and walnut, gently mix. Set aside for 5 minutes.
7. Fill the liners with the batter until 90% full. Bake for 30-40 minutes (at last 5 minutes bake upper heat at 200'C to brown the top) or until a skewer inserted into the centre of the muffin comes out clean.
8. Remove the muffin from the oven and set on a wire rack to cool completely.
