Ingredients :

100  gm   unsalted butter
125  gm   caster sugar
  35  gm   soft brown sugar
115  gm   all purpose flour
  20  gm   cocoa powder
 1/2  tsp   baking powder
 1/4  tsp   baking soda
 1/4  tsp   salt
    1  tsp   vanilla extract
    2          eggs
120  ml     cold water

Method :

1.   Preheat oven to 170'C.
2.   Line cupcake tray with paperliners.
3.   Sift together flour, cocoa powder, baking powder, baking soda and salt.
4.   Cream butter, caster and brown sugar for 2-3 minutes.
5.   Add in the vanilla and beat in the eggs one at a time.
6.   Alternately add flour/cocoa mixture and cold water in two batches to creamed butter mixture.
7.   Mix well but do not overbeat.  Fill each papercup two-thirds full.
8.   Bake for 18-20 minutes or when skewer inserted in centre of cupcake comes out clean.
9.   Decorate with buttercream frosting if desired.
