CONGO BARS










CONGO BARS

Ingredients :

  125  gm   butter  (2/3  cup, softened)
  290  gm   brown sugar  (2  cups)
      3  eggs  A  (165 gm)
  300  gm   all-purpose flour  (2 1/2 cups)
2 1/4  tsp   baking powder
  270  gm   chocolate chip  (1 1/2  cup)
   1/2  tsp   salt
      1  tsp   vanilla essence
      1  cup  chopped pecans (optional)


Method :

1.   Pre-heat oven to 170'C.

2.   Sift flour, baking powder and salt into a large bowl.  Set aside.

3.   Stir brown sugar into softened (not melted) butter in another large bowl until butter disappears.  You can use the back of your spoon to help incorporate the two together.

4.   Add eggs one at a time to butter mixture and stir well after each addition.

5.   Add vanilla essence, chocolate chips and nuts.  Mix well.

6.   Add dry flour mixture and stir until well combined.  (This is a sticky dough.  DO NOT OVER MIX).

7.   Coat a 8 inch x 11 inch pan with non-stick spray and spread batter evenly.  (I used parchment paper).

8.   Bake for 30 minutes or until top is golden brown.  (Make sure not to over bake).  Allow bar to cool for 2 minutes in pan and then cut into squares.  Then let it cool completely before storing in an airtight container.
