DOUBLE CHOCOLATE MUFFIN RECIPE








DOUBLE CHOCOLATE MUFFIN RECIPE

Ingredients :

   1  cup   all-purpose flour
   1  tsp    baking powder
1/4  tsp    baking soda
   2  tbsp  unsweetened cocoa powder
1/2  cup   +  2  tbsp   granulated sugar
1/2  tsp    salt
1/2  cup   semi-sweet chocolate chips
1/4  cup   vegetable oil
1/3  cup   milk
   3  tbsp  Greek yogurt or plain yogurt
   1  tsp    vanilla extract
   1  large  egg
Extra chocolate chips for decoration


Method :

1.   Dry ingredients :  Sift all-purpose flour, baking powder, baking soda, cocoa powder, sugar and salt.  Then whisk to combine.  And finally stir in chocolate chips.

2.   Wet ingredients :  In another mixing bowl, add vegetable oil, milk, yogurt, vanilla extract and egg.  Lightly whisk to combine.

3.   Then pour wet ingredients into the dry ingredients.  Whisk until well combined.  Do not over beat.

4.   Fill the muffin molds with batter 2/3 full.  Decorate with chocolate chips on top.

5.   Bake in the pre-heated oven 350'F/180'C for 20 to 23 minutes.
