APPLE BROWNIE FUDGE

Ingredients :
250 gm cooking chocolate
100 gm butter
80 gm caster sugar
2 eggs
70 gm flour
Filling :
160 gm apple flesh (diced - I use dried appricot)
1 tbsp butter
30 gm caster sugar
Topping :
200 gm white cooking chocolate
80 ml fresh milk
80 gm marshmallow
Method :
1. Line a 20cm (8") square baking pan with aluminium foil (grease the foil also as it is quite sticky).
2. Preheat oven to 180'C.
3. Melt chocolate, butter and sugar over low heat. Remove from heat and leave to cool.
4. Stir in egg, then fold in sifted flour to forms batter.
5. To make filling : heat up frying pan to melt butter and sugar, add in apple dices. Stir frequenly until apple are tender. Dish up and add into chocolate mixture, mix well.
6. Spread batter into prepared pan. Bake in oven for 30-35 minutes.
7. To make topping : bring all ingredients to cook over low heat until mixture is melted. Pour over the brownie and leave to cool. Refrigerate until set.
8. Slice and decorate as desired.
