RED VELVET CHOCOLATE CHIP

Ingredients :

1 1/2  cup    all-purpose flour
2 1/2  tbsp   cocoa powder
      1  tsp     cornstarch/cornflour
   3/4  tsp     baking powder
   1/4  tsp     salt
   1/2  cup    butter, softened
      1  cup    granulated sugar
      1  tsp     distilled white vinegar
      1  large  egg
1 1/2  tsp     vanilla essence
1 1/2  tsp     red food colouring
   3/4  cup    chocolate chip, divided (original recipe use white chocolate chip)


Method :

     Preheat oven to 375'F.  In a mixing bowl, whisk together the flour, cocoa powder, cornstarch, baking powder and salt, set aside.
     Beat together butter, sugar and vinegar until pale and fluffy, about 3-4 minutes.  Mix in egg.  Add in vanilla essence and red food colouring and mix until well blended.  Slowly add in dry ingredients and mix just until combine.  Mix in half of the chocolate chip.  (The other half reserve for garnishing on top of the cookies.)
     Scoop dough by heaping tablespoonfuls and shape into balls.  Transfer to parchment baking lined tray and pressed some extra chocolate chip onto tops of cookies (the other half of the chocolate chip).
     Bake for 9-11 minutes.

NOTE :  adunan ini lembik tapi cookies ni sedap.
