CARROT AND WALNUT CUPCAKES


 Untuk dibawa balik ke asrama sekolah (Amin) sebagai kudapan dengan teman-teman.






CARROT AND WALNUT CUPCAKES

Ingredients :

125  gm   unsalted butter
180  gm   caster sugar
    2          eggs
270  gm   carrots  -  grated
  60  gm   walnuts  -  chopped
  75  gm   self-raising flour
  75  gm   all-purpose flour
    1  tsp   mixed spice powder (I use cinnamon powder)
 1/4  tsp   salt


Method :

1.   Preheat oven to 170'C.
2.   Line cupcake tray with paper cup liners.
3.   Sift flour, salt and spice powder together.
4.   Cream butter and sugar with electric mixer for 2-3 minutes.
5.   Beat in eggs one at a time.  Stir in nuts and carrots.
6.   Add flour and mix well.
7.   Fill each cupcake liner 2/3 full.
8.   Bake for 20-25 minutes OR when skewer inserted in centre of cupcake comes out clean.


Creme Cheese Frosting :

125  gm   cream cheese
  60  gm   unsalted butter
200  gm   icing sugar  -  sifted


Method :

1.   Beat butter and cream cheese until smooth and white.
2.   Gradually beat in icing sugar until smooth.
3.   Ready to be use.
