PEANUT BUTTER CHOCOLATE
CHIP COOKIES

Ingredients :
2 1/4 cups all-purpose flour (270 gm)
3/4 tsp baking soda, heaping (4 gm)
1 1/2 cup smooth peanut butter (370 gm)
1 cup unsalted butter, room temperature (2 sticks/226 gm)
2/3 cup granulated sugar (135 gm)
3/4 cup packed light-brown sugar (200 gm)
1/2 tsp salt, plus more for top (3 gm)
2 tsp pure vanilla extract (10 ml)
2 large eggs
1 1/2 cup semi-sweet chocolate chips (265 gm)
Instructions :
1. Preheat oven to 350'F/176'C.
2. In a small bowl, whisk together the flour and baking soda; set aside.
3. Combine the butter and peanut butter with both sugars; beat on medium speed until light and fluffy.
4. Reduce speed to low; add the salt, vanilla extract and eggs. Beat until well mixed, about 1 minute.
5. Add flour mixture; mix until just combined.
6. Stir in the chocolate chips.
7. Drop 2 tablespoon - size balls of dough about 2 inches apart on baking sheets lined with parchment paper. (Me use 1 tablespoon, as a guide to get the same size).
8. Bake until cookies are golden around the edges, but still soft in the center, 10 to 15 minutes. The longer baking time will give you a crisper cookie.
9. Remove from oven, and let cool on baking sheet 1 to 2 minutes. Transfer to a wire rack, and let cool completely.
