CHOCOLATE BANOFEE PIES (delicious but too sweet)

CHOCOLATE BANOFEE PIES

Ingredients :

250  gm    Oreo cookies
180  gm    unsalted butter
  75  gm    dark chocolate  -  chopped
395  gm    caramel condensed milk  (dulce de leche)
100  gm    brown sugar
    1  tbsp  golden syrup
300  ml     double cream or UHT whipping cream
    2  small  bananas  - sliced
Chocolate curl to serve/deco


Method :

1.   Take the cream out of the cookies.  Crumble the oreo cookies into a food processor.  Meanwhile, melt 80 gm of the unsalted butter, then add to the crumbs.  Pulse to combine.

2.   Press over the base and sides of 20cm/8 inch loose-bottom fluted tart tins.  Chill for 20 minutes until firm.

3.   Warm the caramel, and the remaining unsalted butter and brown sugar in a pan over low heat.  When the sugar has dissolved, remove from the heat and stir in the golden syrup.

4.   Place the chocolate in a bowl over a pan of simmering water.  Allow to melt, then stir until smooth.  Pour the chocolate into the caramel mixture and stir until smooth.

5.   Placed the sliced banana and fill the tins with the caramel mixture, smoothing with a palette knife.  Chill for at least 1 hour to set.

6.   In a clean bowl, whip the cream until it form soft peaks.

7.   To serve, top the pies with whipped cream, dust with cocoa powder and sprinkle with the chocolate curl.
