CHOCOLATE CHIP MUFFINS (yields : 22 pcs)

CHOCOLATE CHIP MUFFINS
adapted from :   Joy of Baking
yields :  22 pcs




Ingredients :

  113  gm  unsalted butter ;  melted and cooled  (1/2 cup)
      2  large  eggs
  160  ml  fresh milk  (2/3 cup)
1 1/2  tsp  vanilla essence
  260  gm  all-purpose flour  (2 cups)
  135  gm  granulated white sugar  (2/3 cup)
2 1/2  tsp  baking powder
   1/4  tsp  salt
  240  gm  chocolate chips  (1 cup)


Cinnamon Sugar Topping :

   1  tbsp  granulated white sugar
1/2  tsp  ground cinnamon


Method :

Chocolate Chip Muffin :  Preheat oven to 190'C/375'F and place oven rack in the center of the oven.  Butter muffin tin or line with paper liners.  Set aside.
     In a bowl, whisk together the eggs, milk and vanilla essence.
     In another bowl, whisk together the flour, sugar, baking powder and salt.  Stir in the chocolate chips.  With a spatula, fold the wet ingredients, along with the melted butter, into the dry ingredients and stir only until the ingredients are moistened and combined.  (DO NOT OVER MIX or you will have a tough muffin).
     Evenly fill in the muffin cups with the batter 2/3 full.  In a small bowl, combine the topping ingredients and then sprinkle a little topping on each muffin.  (Sprinkle some chopped walnuts on top if you wish).
     Bake for about 18-20 minutes or until done.
