CARROT CAKE

1 cup walnuts/pecan (chopped)
340 gm carrot finely grated)
2 cups all-purpose flour
1 tsp. baking soda
1 1/2 tsp. baking powder
1/2 tsp. salt
1 1/2 tsp. ground cinnamon
4 large eggs (A)
1 1/2 cups caster sugar
1 cup vegetable oil
2 tsp. vanilla essence

Cream Cheese : 1/4 cup unsalted butter
Frosting 227 gm cream cheese
2 cups icing sugar - sifted
1 tsp. vanilla essence
1 tsp. lemon zest

Garnish : 1 cup toasted and finely chopped walnuts
(optional) Marzipan carrots


Preheat oven to 180'C. Tray : 9 x 2 inch pans. In a separate bowl, combine/whisk together flour, baking soda, baking powder, salt and ground cinnamon. Set aside.
Beat eggs until frothy (about 1 minute). Add sugar and beat until thick and light coloured (3-4 minutes). Add in oil and vanilla essence.
Add flour mixture and beat until just incorporated. Fold in grated carrot and chopped nuts. Pour into pan and bake for 30 minutes - 1 hour.

Frosting : Beat cheese and butter until blended with no lumps. Add icing sugar and beat until fluffy and smooth. Beat in vanilla and lemon zest. Spread onto cake. (untuk frosting ini gula icing elok dikurangkan sedikit sebab terlalu manis).
