PEANUT BUTTER CHOCOLATE CHIP COOKIES

1 1/4 cups all-purpose (plain) flour
1/2 tsp. bicarbonate of soda
1/8 tsp. salt
1/2 cup butter, softened
1/2 cup brown sugar
1/2 cup smooth peanut butter
1 tsp. vanilla essence
1 large egg
125 gm chocolate chip


Preheat the oven to 190'C. Butter a baking sheet. Mix the flour, bicarbonate of soda and salt in a medium bowl. Beat the butter and sugar until creamy. Beat in the peanut butter. Add the vanilla and egg, beating until just blended.
With mixer on low speed beat in the mixed dry ingredients, followed by the chocolate chip. Shape into small balls and place 2 inches apart on the prepared baking sheet. Bake until just golden at the edges, 10-12 minutes. Cool on the baking sheet until the cookies firm slightly, about 5 minutes. Transfer to wire rack to cool completely.
