NASI LEMAK with SAMBAL IKAN BILIS


 Hari ni buat nasi lemak yang simple, tiada bahan sampingan seperti telur rebus dan 
kacang tanah kerana kehabisan stok dirumah.  Malas pula nak keluar untuk 
membeli tetapi tetap menyelerakan.  Janji mengenyangkan..betul tak!!








NASI LEMAK with SAMBAL IKAN BILIS

Ingredients Traditional Nasi Lemak :

2  cups  Japanese Sumo Rice  (I use normal rice only)
1  cup  coconut milk
3  cups  water
1  tsp  salt
2  nos  shallots  -  crushed
2  nos  garlic  -  crushed
3  nos  pandan leaves  -  wash & tie into a knot


Ingredients Sambal Ikan Bilis :

  50  gm  dried anchovies
300  gm  onion
  50  gm  garlic
  40  gm  dry chilli
    8  pieces  red bird eye chilli
  10  gm  shrimp paste @ belacan
  10  gm  tamarind paste
    2  tbsp  Del Monte Tomato Paste
    2  cups  water
  10  gm  belacan
    1  tsp  salt
 1/2  tsp  sugar


Method :

Nasi Lemak :  Put all ingredients in the rice cooker and boil until it's well cooked.


Sambal Ikan Bilis :

1.  Blend onion and garlic in a food processor/blender.

2.  Blend dry chilli and red bird eye chilli together, add in oil if necessary.

3.  While preparing the ingredients, heat up the wok on low flame for at least 20 minutes.  Fry anchovies until crispy.  Sieve the fried anchovies and save the remaining oil.

4.  Put in the belacan and fry until it releases its flavour.  Add in the blended onions and garlic.  Stirring constantly.  Add in blended chillies.

5.  Keep stirring until oil starts to separate, add the tomato paste and stir.

6.  Add in the mixture of tamarind paste and water.  Cook for another 5 to 10 minutes.  Season with salt and sugar to taste.  Set aside until it's cooled.

7.  Add in the crispy anchovies last, mix to combine and serve.
