BANANA BLUEBERRY MUFFINS

Ingredients :
160 gm plain flour
3/4 tsp baking powder
1/4 tsp baking soda
80 gm castor sugar
Salt (a pinch)
1 large egg
125 gm buttermilk (125 gm fresh milk + 1/2 tbsp vinegar/lemon juice, let sit for 10-15 minutes until it curdles before using)
60 gm cooled melted butter
100 gm fresh blueberries
100 gm mashed bananas
1/2 tsp vanilla extract
Instructions :
1. Preheat oven to 200'C.
2. In a large mixing bowl, whisk together flour, baking powder, baking soda, sugar and salt.
3. In another bowl, mix together melted butter, vanilla extract, buttermilk and egg.
4. Pour wet ingredients into dry ingredients and mix to just about combine and still lumpy.
5. Then fold in mashed bananas followed by blueberries. Do not over mix!
6. Fill muffin cups to 90% full.
7. Bake for 30 minutes on mid level or until skewer inserted in muffin comes out clean.
