LEMON YOGURT MUFFINS ...










LEMON YOGURT MUFFINS

Ingredients :

160  gm  butter,  softened
100  gm  caster sugar
2  eggs   (me :  use grade A)
200  ml  plain yogurt
2  tsp  lemon juice
1/2  tsp  lemon oil
1  Lemon zest,  grated from 1 lemon
200  gm  plain flour
1/2  tsp  baking powder
1/2  tsp  baking soda
1/4  tsp  salt


Method :

Preheat oven to 190'C.
Cream butter and sugar until light and fluffy.
Add in eggs, one at a time.
Then stir in the plain yogurt, lemon juice, lemon zest and lemon oil.
Combine the flour, baking powder, baking soda and salt together.
Stir into the lemon mixture until just blended.  Do not over mix.
Scoop batter into piping bag and pipe batter into papercups up to 3/4 full.
Bake for about 30-35 minutes or until a skewer inserted in the muffins comes out clean.
Remove from oven and cool completely on a wire rack.
