CHOCOLATE BANANA MUFFINS

Ingredients :
3/4 cup dark brown sugar
6 tbsp unsalted butter ~ melted (90 gm)
1 large egg
1 tsp vanilla extract
3 large ripe bananas about 1 cup when mashed
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3/4 cup semi-sweet chocolate chips plus more for topping
Method :
~ Preheat oven to 425'F/218'C.
~ In a large bowl, whisk together sugar, butter, egg and vanilla extract.
~ Add mashed bananas and whisk to combine.
~ Place a strainer over the bowl and sift together flour, cocoa powder, baking powder, baking soda and salt. Lastly, fold in chocolate chip until just combined.
~ Use a spatula to mix and stir until just combined. Do not overmix.
~ Line a standard 12 cup non-stick muffin pan with paper liners. Scoop and divide batter equally into 12 cups.
~ Top with more chocolate chips, about 5-8 pieces depending on your preference.
~ Bake for 5 minutes at 425'F/218'C then lower heat to 350'F/176'C and bake an additional 12-15 minutes, or until a toothpick inserted in muffin comes out almost clean.
~ Remove from oven and cool for about 10 minutes before removing from muffin tin. Cool completely on wire rack.
~ Serve and enjoy !!!
