CHOCOLATE CUPCAKES

1/2 cup cocoa powder (50 gm) ) Mix together & set to cool
1 cup boiling hot water (240 ml) ) at room temperature.
1 1/3 cup all-purpose flour (175 gm )
2 tsp. baking powder ) (whisk together)
1/2 tsp. salt )
1/2 cup unsalted butter (113 gm)
1 cup caster sugar (200 gm)
2 large eggs
2 tsp. vanilla essence

Chocolate Fudge
Frosting :

4 oz. unsweetened chocolate (chopped - 120 gm)
2/3 cup unsalted butter (150 gm)
1 1/3 cup icing sugar (sifted - 160 gm)
1 1/2 tsp. vanilla essence


Beat butter and sugar until light and fluffy. Add egg one at a time until smooth. Beat in vanilla essence. Add flour mixture until incorporated. Add cooled cocoa mixture and stir until smooth. Fill 2/3 into cupcake liner and bake at 190'C for 20 minutes. Decorate as desired. (I used plain buttercream and coloured it with orange flavour/emulco).

Frosting : Melt chocolate (double-boil) and let cool at room temperature. Beat butter until smooth and creamy (about 2 minute). Beat in vanilla essence. Add chocolate and beat until smooth and glossy (about 2-3 minutes).
