CHOCOLATE CHIP MUFFINS
CHOCOLATE CHIP MUFFINS

Ingredients :
1/2 cup unsalted butter - melted & cooled (113 gm)
2 large eggs
2/3 cup milk (160 ml)
1 1/2 tsp pure vanilla extract
2 cups all-purpose flour (260 gm)
2/3 cups granulated sugar (135 gm)
2 1/2 tsp baking powder
1/4 tsp salt
1 cup chocolate chips (240 gm)
Cinnamon Sugar Topping : (combine together)
1 tbsp granulated white sugar
1/2 tsp ground cinnamon
Method :
1. For the muffins : Preheat oven to 375'F/190'C. Line paper liners in muffin cups/tin. Set aside.
2. In a bowl, whisk together the eggs, milk, melted butter and vanilla extract.
3. In another bowl, whisk together the flour, sugar, baking powder and salt. Stir in the chocolate chips. Mix until combined. With a spatula, fold in the wet ingredients into the dry ingredients just until moistened. (DO NOT OVER MIX or you will get a tough muffin).
4. Evenly fill the muffin cups 3/4 full. In a small bowl, combine the toppings together and then sprinkle a little topping on each muffin.
5. Bake for about 18-20 minutes until done...
