VANILLA PANNA COTTA with STRAWBERRY COMPOTE

Ingredients :
450 ml cold fresh milk
10 gm vegetable gelatin
70 gm caster sugar
200 ml whipping cream
1/2 tsp vanilla extract
Method :
1. Sprinkle the gelatin into the cold milk. It is important to sprinkle the gelatin so the gelatin can absorb the milk. Set aside for 5-10 minutes.
2. Heat up the whipping cream and sugar until the mixture starts to bubble and the sugar has dissolved. Turn off the heat.
3. Add in the gelatin mixture.
4. Stir in the vanilla extract.
5. Pour into the containers of your choice. Set aside to let cool (at least 5-6 hours).
6. Chill in the fridge until they set and firm.
7. Serve with strawberry compote or vanilla ice cream.
Strawberry Compote :

20 pieces fresh swtraberries (hulled & chopped)
1/3 cup strawberry jam
1/3 cup sugar
1/2 cup water
2 tbsp lemon juice or balsamic vinegar
Method :
While the panna cotta sets, combine the strawberries, strawberry jam, sugar, lemon juice and 1/2 cup water in a saucepan. Bring to a boil over high heat, and then reduce to medium-high heat and continue to boil until the mixture becomes syrupy, about 18 minutes. Remove from heat and let it cool (it will continue to thicken as it cools). Cover and chill until ready to serve.
