MINI BLUEBERRY MUFFINS (makes 12)

Ingredients :

  160  gm   All-purpose flour
    80  gm   caster sugar
1 1/4  tsp   baking powder
   1/8  tsp   baking soda
   1/4  tsp   salt
   1/2  tsp   ground cinnamon
  125  ml    fresh milk
    65  gm   unsalted butter (melted)
      1  egg  A/B
  100  gm   blueberry  (fresh or frozen - if using frozen, thawed first)


Method :

1.   Preheat the oven to 200'C.  Line the mini cheese cake pan with papercups.  Set aside.

2.   Pour the milk and egg into the melted butter and whisk to combine.

3.   Whisk the dry ingredients together.  Pour the butter mixture into the dry ingredients, mix together with spatula.  Stir just until well blended.  Add 65 gm of the blueberry. 

4.   Stir just until evenly incorporated (DO NOT OVER MIX), then scoop the batter into the prepared pans.  Sprinkle with the reserved blueberry on top.

5.   Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
