Ingredients :
1 1/4 cup all purpose flour
2 tbsp. cocoa powder
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/4 cup unsalted butter, at room temperature
3/4 cup caster sugar
3/4 cup buttermilk
1 large egg
1 tsp. vanilla essence
Red food colouring
Cream Cheese Frosting :
2 cups icing sugar, sifted
4 oz. cream cheese, room temperature
2 tbsp. unsalted butter, room temperature
1 tbsp. milk
1 tsp. vanilla essence
Method :
Preheat oven to 350'F. Line a muffin pan with cupcake liners and set aside. In a small bowl, mix together the first 5 ingredients and set aside. Cream together sugar and butter, add the egg and vanilla essence and beat until creamy.
Add 1/2 of the dry ingredients alternately with the buttermilk. Add enough red food colouring to the batter until you get the desired colour. Scoop batter into cupcake liners 3/4 full and bake for 18-22 minutes or until a skewer inserted comes out clean.
Cream cheese frosting : Put all the ingredients in a mixing bowl and beat until thick and creamy. Ready to use.
