RED VELVET CUPCAKES

Ingredients :
2 1/2 cups cake flour (not self-raising), sifted
2 tbsp cocoa powder
1 tsp salt
1 1/2 cup caster sugar
1 1/2 cup vegetable oil
2 large eggs
1/2 tsp red gel paste food colour
1 tsp vanilla essence
1 cup buttermilk (1 cup fresh milk + 1 tbsp vinegar = let sit for 10 minutes)
1 1/2 tsp baking soda
2 tsp white vinegar
Method :
1. Preheat oven to 350'F. Line muffin tin with paper liners. Set aside.
2. Whisk together cake flour, cocoa powder and salt. Set aside.
3. With electric mixer, whisk together sugar and oil until combined. Add eggs, one at a time beating until incorporated. Mix in food colour and vanilla essence.
4. Add flour mixture in three batches, alternating with two additions of buttermilk, and whisking well. Stir together the baking soda and vinegar in a small bowl (it will foam), add mixture to the batter and mix on medium speed 10 seconds.
5. Divide batter evenly among lined paper liners, filling each 3/4 full.
6. Bake for about 20 minutes. Deco as desired.
