BLUEBERRY YOGURT MUFFIN
(Makes : 5)

Ingredients :
80 gm cake flour
3/4 tsp baking powder
1/8 tsp salt
30 gm brown sugar
25 gm granulated sugar
1/2 tsp vanilla extract
1 egg (I use grade A)
55 gm plain yogurt
30 gm shortening or rice bran oil (I use corn oil)
60 gm blueberry (fresh or frozen)
Directions :
1. Preheat oven to 200'C. Line muffin tins with 5 paper baking cups.
2. Beat the shortening until smooth, add in both kinds of sugar, salt and vanilla extract. Beat to combine.
3. Add the yogurt and egg, and beat to combine.
4. Sift the flour and baking powder into the bowl, and add the blueberry. Fold to combine.
** You can use fresh or frozen blueberry for this recipe. When using frozen blueberry, you don't have to defrost it.
5. Divide the batter evenly among the prepared tins.
6. Bake for 18-20 minutes or until the top spring back when touch lightly...
