BLUEBERRY WAFFLES

servings : 4-6 waffles
Dry Ingredients :
2 cups all-purpose flour
1 tsp salt
1 tbsp baking powder
2 tbsp granulated sugar
Wet Ingredients :
2 eggs (large)
6 tbsp butter ~ melted (85 gm)
1 1/2 cups milk
2 tsp vanilla extract
To Fold In : 4 oz fresh blueberries
To Serve :
1 tbsp powdered sugar
1/2 cup maple syrup
Instructions :
1. Preheat the waffle iron.
2. In a large bowl, whisk together the dry ingredients.
3. In a smaller bowl, whisk the eggs, melted butter, milk and vanilla extract until well combined.
4. Add the wet ingredients to the dry, and mix until just combined. Mixture will be lumpy.
5. Fold in the blueberries.
6. Spray the waffle iron with baking spray, and cook waffles until light brown and slighly crispy.
7. Serve dusted with powdered sugar and a little maple syrup.
