Chiffon


 DELTA MOCHA CHIFFON CAKE



DELTA MOCHA CHIFFON CAKE  (9 inch)

Ingredients :

3/4  cup    boiling water
1/2  cup    cocoa powder
1     tsp     instant coffee granules
1 3/4 cup  cake flour
1 3/4 cup  white sugar
1 1/2 tsp   baking soda
1/2    tsp   salt
8     large  eggs,  separated
1/2  cup    vegetable oil
2     tsp     vanilla essence
1/2  tsp     cream of tartar

Method :

    Stir together the first 3 ingredients until blended, cool.  Combine flour and next 3 ingredients in a large mixing bowl.  Add the cocoa mixture, egg yolks, vegetable oil and vanilla essence, beat on medium speed until smooth.
    Beat egg whites and cream of tartar until foamy and soft peaks.  Fold into batter in 3 batches with spatula.  Pour into ungreased 9-inch pan.
    Bake for 45 minutes to 1 hour at 180'C.  Immediately invert when taken out of the oven until cool.  Once cooled, invert and slice.  Ready to serve.

Notes :  Makes 1 (9-inch) layer cake and fills with filling of your choice
              Filling :  chocolate coffee buttercream or
                          chocolate fudge frosting
