PANCAKE MINI MUFFINS

Ingredients :
3 cups all-purpose flour
1 tbsp baking powder
3 tbsp caster sugar
3/4 tsp salt
2 1/2 cups fresh milk
1 tbsp white vinegar
2 whole eggs gred 'A'
1 tbsp vanilla essence
4 tbsp unsalted butter ; melted
Blueberries (optional) - I use chocolate chips
Warm syrup ; for serving
Method :
Preheat oven to 425'F. Spray a mini-muffin pan with baking spray. Set aside.
Sift together flour, baking powder, caster sugar and salt. Set aside. Meanwhile stir together the milk and vinegar and let it sit for 1 minute. Then whisk in eggs and vanilla essence.
Combine the dry ingredients and wet ingredients, then stir in the melted butter. If batter is too thick, stir in a little milk. Fill the muffin cups 2/3 full. If using blueberries/chocolate chips, drop 2-3 blueberries/chocolate chips into each cup.
Bake for 8-9 minutes ; or until golden brown on top. Let sit in the pan for 1-2 minutes, then turn out. Serve with warm syrup or dust some icing sugar on top of the pancake.
