EASY COFFEE PUDDING









EASY COFFEE PUDDING

Ingredients :  (4 servings)

2  tbsp  corn starch
2  tbsp  sugar
1  tsp  ground cinnamon
Pinch salt
2  cups  whole milk
1  tbsp  instant espresso powder
1  tsp  vaanilla extract


Method :

1.  Whisk the corn starch, sugar, cinnamon and salt in a 2-quart heavy saucepan.  Gradually whisk in the milk.

2.  Boil the mixture over medium-high heat, whisking constantly, about 2 minutes.  The mixture will be thick when done.

3.  Remove the saucepan from the heat.  Whisk in the espresso powder and vanilla extract until smooth.  Transfer the mixture to a bowl/glass and cover with plastic wrap.

4.  Chill the bowl/glass in the fridge until cold, at least 2 hours.  Serve the pudding chilled with vanilla ice cream, fresh whipped cream etc...
