CHOCOLATE, CRANBERRY & MACADAMIA BROWNIES

Ingredients :
60 gm dark chocolate, broken into chunks
113 gm unsalted butter
100 gm caster sugar
35 gm Prima Top/plain flour ~ sifted
1/2 tsp baking powder
1/4 tsp salt
1/2 tsp vanilla extract
2 eggs, at room temperature
50 gm dried cranberry
100 gm macadamia nuts (I use Almond nuts that I roast in the oven for 5-10 minutes)
Directions :
1. Preheat the oven to 160'C.
2. In a heatproof saucepan, melt the chocolate and butter.
3. Mix in the sugar and vanilla extract.
4. Add the eggs, one at a time and whisk to mix.
5. Stir in the dried cranberries and macadamia/almond nuts.
6. Finally, stir in the dry ingredients until just mixed.
7. Pour the batter into a 8x8 inch baking pan that has been lighly greased and lined.
8. Bake in the preheated oven 160'C for about 25-30 minutes.
9. Allow the brownie to cool in the pan before cutting and serving...
NOTES : Unless otherwise stated, I use 65 gm eggs for the above recipe...
