HOMEMADE WAFFLES

Ingredients : (makes about 10 pcs)
2 cups all-purpose flour (250 gm)
2 tsp baking powder (8 gm)
1/2 tsp salt (3 gm)
3 tbsp sugar (45 gm)
1 tsp vanilla extract (5 gm)
2 cups fresh milk (480 ml)
2 eggs, separated (I use large eggs - grade A)
3 tbsp butter, melted (45 gm)
Directions :
1. In a large bowl whisk together the dry ingredients : flour, baking powder and salt.
2. Separate the eggs. Mix the egg yolks with sugar, melted butter and milk and add to the dry ingredients and mix until well combined.
3. Whip the egg whites until soft peaks and gently fold them into the yolks mixture until well combined.
4. Preheat your waffle iron and spray both surfaces with cooking spray or grease with oil. Pour about 1/3 cup batter onto one side of the iron waffle and close it.
5. Bake until the iron's indicator light shows that cooking is done and the waffles are golden brown and crisp. It's best to serve them immediately with butter, maple syrup or honey and fruits...
