TRADITIONAL BUTTER CAKE

Ingredients :

250  gm    butter
100  gm    margarine
250  gm    caster sugar
 1/4  tsp    salt
    5  eggs  (B)
 1/2  tsp     vanilla essence
250  gm     plain flour
    1  tsp     baking powder
Peanut butter & almond flakes for deco on cake (optional)


Method :

1.   Grease and line a 20cm (8-in) baking tin.  Preheat oven to 180'C.
2.   Beat butter, margarine, sugar and salt until light and fluffy.
3.   Add in eggs, one at a time, beating thoroughly after each addition.
4.   Stir in essence.  Fold in sifted flour and baking powder, mix until well blended.
5.   Spread batter into prepared tin.  Spoon a few dollops of peanut butter and swirl it.
6.   Then sprinkle a few of almond flakes on it.  Bake in oven for 35-40 minutes or until cooked.
