BANANA MUFFINS with WHITE CHOCOLATE

Ingredients :
1 3/4 cups all-purpose flour (225 gm)
1/2 cup white granulated sugar (100 gm)
1/4 cup light brown sugar (55 gm)
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup white chocolate chips or chunks (65 gm) - I used white & dark chocolate chips
3 large ripe bananas (approximately 454 gm) - mashed well, (about 1 1/2 cups)
1/2 cup unsalted butter - melted & cooled (113 gm)
2 large eggs - lightly beaten
1 tsp vanilla extract
Method :
1. Preheat oven to 350'F/180'C. Line 12 muffin cups with paper liners. Set aside.
2. In a large bowl, combine the flour, both sugars, baking powder, baking soda, salt and white chocolate chips.
3. In a medium-sized bowl, combine the mashed bananas, melted butter, eggs and vanilla extract. With a spatula, lightly fold in the wet ingredients into the dry ingredients just until combined and the batter is thick and chunky. (The important thing is not to over mix the batter. Over mixing the batter will yield tough, rubbery muffins).
4. Spoon the batter into the prepared muffin tins. Bake for about 20-25 minutes or until a toothick inserted comes out clean.
