PEANUT BUTTER DARK CHOCOLATE COOKIES

Ingredients :
1 cup chunky peanut butter (250 gm)
1/2 cup packed dark brown sugar (90 gm) (I used light brown sugar)
1/2 cup granulated white sugar (100 gm)
1 egg grade A
1 tsp baking soda (5 ml)
1 cup dark chocolate chips or chunks
Method :
1. Preheat the oven to 350'F. Line a large baking sheet with parchment paper, set aside.
2. In a stand mixer, mix the peanut butter, both sugars, egg and baking soda on medium speed until combined. Fold in the chocolate chips or chunks with a spatula.
3. Create 1-inch balls and place on the prepared baking sheet at least 2 inches apart.
4. Bake for 12 minutes or until lightly golden.
Cook's Note : Because the dough has so much chocolate, try pressing the dough together to form the balls rather than rolling. It works better.
