PANDAN KAYA MUFFIN


200 gm tepung gandum
1 1/2 tsp baking powder
1/2 tsp soda bicarbonate (optional)
1/2 tsp garam
120 gm gula kastor
200 ml santan (boleh guna santan kotak)
100 ml minyak jagung/butter cair
2 biji telur
1 tsp pandan pes + sedikit pewarna hijau
1/2 tsp esen pandan

Nota: 5-7 helai daun pandan, blend dengan santan 200 ml dan tapis jika suka.


Ayak tepung, baking powder, soda bicarbonate dan garam. Campur gula dan kacau sebati guna hand whisk.
Campur semua bahan basah ke dalam bahan kering. Kaup balik sekadar bercampur rata. (Do not over mix nanti muffin keras. Adunan sekadar lumpy saja).
Bakar.

Suhu : 190 celcius selama 20 minit

KUIH BAKAR KELEDEK


4 biji telur
3 cawan santan
2 cawan tepung gandum
1 cawan gula
1/2 tsp garam
1 tsp esen vanilla
2 tbsp butter
2 cawan keledek (rebus & lecek)

Satukan bahan di atas kecuali keledek lecek dalam satu bekas. Kacau dengan whisk hingga semua sebati. Tapis dan masukkan keledek lecek. Kacau sebati.
Tuang dalam loyang dan bakar hingga masak. (Kalau nak permukaannya berkerak tambah masa pembakarannya).
Keluarkan dari oven setelah kuih masak. Sejukkan dahulu sebelum dikeluarkan dari loyang. Potong & hidang.

Suhu : 200 celcius - 1 jam/masak
Tray: 7 x 7 x 3 inci
Nota: sudah cuba & sedap sekali

Kek Chiffon Pelangi

KEK CHIFFON PELANGI (9 inch)


Bahan A : 6 biji kuning telur
4 tbsp minyak jagung
60 ml susu segar
1/2 tsp esen vanilla
50 gm gula kastor
110 gm tepung naik sendiri (ayak)

Bahan B : 6 biji putih telur
100 gm gula kastor
1/4 tsp cream of tartar
sedikit pewarna kuning, hijau, pink &
sedikit chocolate emulco

Putar bahan B iaitu putih telur dan gula baru masukkan cream of tartar. Putar hingga kental. Ketepikan dulu.
Dalam bekas lain, satukan semua bahan A dikacau dengan whisk hingga sebati. Ketepikan sebentar.
Tuang adunan B - putih telur ke dalam adunan A. Kaup balik dengan spatula hingga sebati. Bahagi kepada 4 bahagian dan warnakan. Tuang ke empat-empat adunan selang-seli hingga habis. Bakar selama 30-40 minit hingga masak. (Acuan tidak perlu disapu butter/marjerin.)

Suhu : 170 celcius

Coffee Biscuit Butter Cake

COFFEE BISCUIT BUTTER CAKE (8 inch)


200 gm butter
200 gm caster sugar
4 eggs
1 tbsp instant coffee powder ) stir together until melted
1 tbsp water )
7 pcs oreo biscuits (chopped)
200 gm self-raising flour
3 pcs oreo biscuits (chopped for garnishing)


Beat butter and sugar until light and fluffy. Add in eggs one at a time beating thoroughly after each addition. Stir coffee powder and water till melted. Add into batter together with biscuits. Fold in sifted flour. Spread batter into prepared tin. Sprinkle with chopped biscuits. Bake until cooked.

Temp: 175 celcius - 40 minutes

Cream Cheese Butter Cake

200 gm butter
200 gm cream cheese
250 gm caster sugar
5 eggs
250 gm plain flour
1 tsp baking powder
3 tbsp strawberry fruit jam - utk hiasan

Beat butter, cream cheese and sugar until light and fluffy. Add in eggs one at a time beating after each addition. Fold in sifted flour and baking powder. Mix until well blended. Spread batter into prepared tin. Spoon fruit jam into piping bag and pipe circle pattern over the top. Bake.
Temp : 180 celcius - 35-40 minutes
Tray : 20 cm (8 inch)
