CHOCOLATE CHIP COOKIES

Ingredients :
250 gm butter
120 gm fine sugar
100 gm brown sugar
2 eggs, lightly beaten (grade A/B)
320 gm all-purpose flour
80 gm corn flour or corn starch
1/4 tsp baking soda
2 tbsp cocoa powder (optional)
100 gm almond nibs (or chopped almonds) ~ roasted
250 gm chocolate chips
Directions :
1. Preheat oven to 200'C/400'F.
2. Combine flour, corn starch and baking soda in a bowl. Set aside.
3. Beat butter, fine sugar and brown sugar until light and creamy.
4. Add eggs and beat well. Gradually mix in the flour mixture.
5. Stir in cocoa powder (if using), chocolate chips and almond nibs. Mix until well combined.
6. Drop by rounded tablespoons onto a baking sheet lined with parchment paper.
7. Bake for about 10 minutes or until golden brown. Let cool on wire rack before keeping in airtight container...
