BUAH TANGAN...

CHOCOLATE CUPCAKES (A KEEPER)
adapted from :    Joy of Baking; sangat sedap...




Ingredients :

1/2  cup  cocoa powder (50 gm) *
1  cup  boiling water (240 ml) *  ( * mix together & let cool )
1 1/3  cup  all-purpose flour (175 gm) *
2  tsp  baking powder *
1/2  tsp  salt *  ( * whisk together )
1/2  cup  unsalted butter  (113 gm)
1  cup  caster sugar  (200 gm)
2  large  eggs
2  tsp  pure vanilla extract


Chocolate Fudge Frosting :

4  oz  chocolate bar , chopped (120 gm)
2/3  cup  unsalted butter  (150 gm)
1 1/3  cup  powdered sugar@icing sugar ~ sifted  (160 gm)
1 1/2  tsp  pure vanilla extract


Directions :

1.  Beat butter and sugar until light and fluffy.  Add egg one at a time until smooth.  Beat in vanilla extract.  Add flour mixture until incorporated.  Add cooled cocoa mixture and stir until smooth.  Fill batter 2/3 into cupcake liner and bake in preheated oven 190'C for 20 minutes until cooked through.

2.  For the frosting :  Melt chocolate (double-boil) and let cool at room temperature.  Beat butter until smooth and creamy (about 1 minute).  Add sugar, beat until light and fluffy (about 2 minutes).  Beat in vanilla extract.  Add cooled chocolate and beat until smooth and glossy (about 2-3 minutes)...
