BLUEBERRY CAKE IN A CUP

Ingredients :
100 gm unsalted butter, soften at room temperature
120 gm caster sugar
50 gm yogurt (plain or blueberry flavour)
3 eggs (medium size) lightly beaten, room temperature
1 tsp. pure vanilla extract
210 gm plain flour
1 tsp. baking powder
Some fresh blueberries
Instructions :
1. With an electric mixer, cream butter and sugar till light and fluffy. Add yogurt, mix to combine.
2. Drizzle in the eggs gradually and beat till incorporated in the batter. (The mixture may appear slightly curdled).
3. Add vanilla extract, mix to combine.
4. Sieve over flour and baking powder and mix with a spatula till smooth.
5. Spoon batter into paper liners, fill it to about 3/4 full. Top with some fresh blueberries (if using frozen berries, do not thaw).
6. Bake in pre-heated oven at 180'C for 25-30 minutes until golden or a skewer comes out clean when inserted into the centre.
7. Transfer to wire rack to let cool completely. Dust the top with some icing sugar if desired.
Serve warm.
