OREO CHOCOLATE CHIP MUFFINS

Ingredients :
150 gm all-purpose flour
2 tsp. baking powder
80 gm chocolate chips
100 gm granulated sugar
1 egg, room temperature (me : grade A)
50 gm Sunflower oil (me : corn oil)
50 gm plain yogurt, room temperature
1/2 tsp. vanilla essence
8 Oreo cookies (me : 12)
additional chocolate chips, to sprinkle on top
Directions :
1. In a bowl, sift the flour and baking powder. Set aside.
2. Add 1 tablespoon of sifted flour into a bowl of chocolate chips. Coat the chocolate chips well with flour. This will prevent them from sinking to the bottom of the muffins.
3. In another bowl, add in sugar and egg. Mix until the mixture turns pale. Add Sunflower oil, yogurt, and vanilla essence. Mix until everything is well combined.
4. Add in previously sifted flour. Mix just until everything is combined, Do not overmix to avoid hard, dense muffins. Add in the chocolate chips that have been coated with flour. Fold everything in just to combine, again Do not overmix.
5. Place muffin cups inside 8 muffin tin (mine 12). Put 1 Oreo cookie at the bottom in each muffin cup. Scoop and divide the batter evenly into the muffin cups. Sprinkle some chocolate chips on top, just for good measure. Bake at 170'C/340'F in a preheated oven for about 15-20 minutes or until golden brown and fully cooked.
