CHOCOLATE CHIP MUFFINS
adapted from : Joy of Baking...
Ingredients : (yields : 16 pcs)
1/2 cup unsalted butter , melted and cooled (113 gm)
2 large eggs
2/3 cup milk (whole or reduced fat) (160 ml)
1 1/2 tsp pure vanilla extract
2 cups all-purpose flour (260 gm)
2/3 cups granulated white sugar (135 gm)
2 1/2 tsp baking powder
1/4 tsp salt
1 cup chocolate chips (semisweet, bittersweet, milk or white chocolate chips) (240 ml)
Cinnamon Sugar Topping :
1 tbsp granulated white sugar
1/2 tsp ground cinnamon
Directions :
1. Chocolate Chip Muffins : Preheat oven to 375'F/190'C and place oven rack in the center of the oven. Butter, or line with paper liners, 12 muffin cups.
2. In a bowl whisk together the eggs, milk and vanilla extract.
3. In another large bowl whisk together the flour, sugar, baking powder and salt. Stir in the chocolate chips. With a rubber spatula or wooden spoon fold the wet ingredients, along with the melted butter, into the dry ingredients and stir only until the ingredients are moistened and combined. (Do not overmix or you will have tough muffins).
4. Evenly fill the muffin cups with the batter, using two spoons or an ice cream scoop. In a small bowl combine the topping ingredients and then sprinkle a little topping on each muffin. Place in the oven and bake for about 18-20 minutes, or until a toothpick inserted in the center comes out clean...
