DOUBLE CHOCOLATE CHIP MUFFINS

Ingredients :
240 gm plain yogurt
1 large egg, lightly beaten
4 tbsp canola or corn oil
1 tsp vanilla essence
230 gm plain flour
30 gm cocoa powder
1 tsp baking powder
1/2 tsp baking soda
120 gm caster sugar
1/4 tsp salt
60 gm mini chocolate chips
Method :
1. In a mixing bowl, whisk together the yogurt, egg, oil, vanilla essence until just combined.
2. Sift flour, cocoa powder, baking powder and baking soda into another mixing bowl. Add sugar, salt and whisk to combine.
3. Pour the wet ingredients into the dry ingredients. With spatula, fold and stir until the ingredients are just combined. DO NOT OVER MIX.
4. Gently stir in the chocolate chips. DO NOT OVER MIX the batter. The finished batter should appear thick and lumpy.
5. Spoon batter into paper muffin cups about 3/4 full. Sprinkle with some chocolate chips (if desired).
6. Bake in preheated oven at 190'C for about 20 minutes (do not over bake).
