LEMON BERRY PANCAKES

For Pancakes :
3/4 cup milk
1 tbsp distilled vinegar
1 tsp lemon juice
1 large egg
2 tbsp butter - melted
1/2 tsp vaanilla essence
1 cup all-purpose flour
2 tbsp granulated sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp lemon zest
1 cup fresh berries - chopped if needed
For serving :
Lemon curd, additional berries and/or maple syrup
Method :
1. In a bowl, combine the milk, vinegar and lemon juice. Allow to stand for 10 minutes before using. Whisk in the egg, melted butter and vanilla essence.
2. In a separate mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt and lemon zest. Pour the milk mixture into the flour mixture and whisk a few times until the batter is mostly free of lumps. Gently fold in the berries.
3. Heat a non-stick pan over a medium heat. Pour 1/4 cups of batter for each pancake and cook until bubbles appear on the surface, about 2-3 minutes. Flip the pancakes over with a spatula and cook an additional 2-3 minutes more or until the pancakes are cooked through. Repeat with the remaining batter.
4. Serve with lemon curd and additional berries, maple syrup or honey. Dust with icing sugar if desired.
