PANDAN COOKIES WITH GULA MELAKA GLAZE...






PANDAN COOKIES WITH 
GULA MELAKA GLAZE

yields about :   38-40 cookies




Ingredients :

1  egg, room temperature  (I use large/grade A egg)
170  gm  unsalted butter, room temperature
200  gm  plain flour
30  gm  cornflour
1 1/2  tsp  baking powder
60  gm  brown sugar
2  tsp  pandan paste
1/4  tsp  salt
1/2  cup  shredded gula Melaka ***  ~  melted

***   Shred the gula Melaka before melting it.  Try to choose a good quality Gula Melaka.  If Gula Melaka gets too thick, add about 1 tablespoon of water...


Directions :

Step 1  ~  Make pandan batter :
-   Using an electrical mixer, cream butter and brown sugar till light and creamy.
-   Add egg.  Continue till well combined.
-   Add pandan paste.  Mix well.

Step 2  ~  Mix in dry ingredients :
-   Next, add all dry ingredients and continue to beat till well mixed.
-   Place dough in a piping bag with a star tip '1M' size.  Pipe mixture onto a lined baking tray.
-   Bake in 180'C preheated oven for 8-10 minutes or until edges are lightly brown (depends on your oven temperature).  Remove from oven.

Step 3  ~   Glaze with Gula Melaka :

-   Melt 1/2 cup shredded gula Melaka under low heat.
-   Drizzle melted warm gula Melaka onto cookies...


NOTE :    It is better to pipe the cookies in smaller size as it spread a bit when baking...
