CHOCOLATE CRUNCH COOKIES

Ingredients :
125 gm butter
100 gm brown sugar
1 egg, lightly beaten (I use grade A)
30 gm Valrhona cocoa powder ~ sifted
90 gm self-raising flour ~ sifted
60 gm plain flour ~ sifted
45 gm dessicated coconut
150 gm dried cherry tomatoes or other dried fruit, chopped (I use dried cranberries)
150 gm chocolate chips
Directions :
1. Preheat oven to 180'C.
2. Lined two baking trays with baking paper. Set aside.
3. Beat butter and sugar until light and creamy. Add egg; beat until combined. Transfer to a large bowl.
4. Stir in sifted cocoa powder and both flours, dessicated coconut, dried cherry tomatoes and chocolate chips. Mix well to form a dough.
5. Roll level tablespoons of mixture into rounds. Place on prepared baking trays, flatten slightly. Sprinkle some dessicated coconut on it.
6. Bake for about 15-18 minutes and transfer to a wire rack to cool completely before storing in an airtight container...
