BLUEBERRY BUTTER CAKE...







BLUEBERRY BUTTER CAKE

Ingredients :

225  gm  unsalted butter,  at room temperature  (2 sticks)
200  gm  all-purpose flour
1  tsp  baking powder
1/2  tsp  salt
200  gm  caster sugar
4  large  eggs
4  tbsp  fresh milk
1  tsp  vanilla essence
6  oz.  fresh blueberries  (around 165-170 gm)
Powdered sugar for dusting  (optional)


Method :

1.  Preheat the oven to 375'F.

2.  Lightly grease the pan (loaf pan, mini loaf pan, 8"x 8" or 9"x 9") with some butter.  Mix the flour and the baking powder together and sieve.  Add in the salt and mix well.  Set aside.

3.  Using an electric hand mixer, beat the butter and sugar until well combined or pale yellow in colour.  Add in the first egg.  Beat well after each addition of egg until creamy.  Add in vanilla essence and mix well.  Fold in the flour into the batter and mix well.  Finally, add in the milk.  Mix well.

4.  Pour the batter into the prepared greased baking tray.  Evenly spread the batter.  Add the blueberries on top of the batter in an even single layer.

5.  Bake until golden brown and cooked, about 40-50 minutes (depending on your oven).  Remove from oven and let cool on a wire rack for 10 minutes.  Unmould and dust with some powdered sugar (optional) when the cake is completely cool.  Cut/slice into pieces.
