ORANGE PISTACHIO MUFFINS

Ingredients : (serves : 10)
100 gm butter
80 gm caster sugar
3 large eggs
250 gm cake flour or plain flour
1 tsp baking powder
1 tsp baking soda
Orange zest from 2 oranges
50 ml fresh squeezed orange juice
50 ml fresh milk
1/2 cup pistachip or any type of nuts you prefer
Directions :
1. Sift flour, baking powder and baking soda together, add orange zest and mix well, set aside. Combine milk and orange juice together and set aside.
2. Beat butter and sugar till light and fluffy at medium speed.
3. Add eggs, one at a time, beating well after each addition.
4. Gradually add flour mixture and milk mixture alternately until mixture combine (do not over mix).
5. Scoop batter into piping bag and pipe into muffin liners to 3/4 full. Add some pistachio nuts on top.
6. Bake in preheated oven at 170'C for about 25-30 minutes or skewer inserted comes out clean.
NOTE : Do not overmix the batter, the gluten in the flour can form elastic gluten strands - resulting in a more dense, chewy texture. Make all the ingredients are at room temperature...
