BANANA WALNUT & COFFEE MUFFIN

Ingredients :
70 gm walnuts
1 ripe banana, peeled (about 100 gm)
160 gm cake flour
1 1/2 tbsp. coffee powder, no sugar added
1 1/2 tsp. baking powder
1/8 tsp. salt
55 gm butter, melted
60 gm brown sugar
1 egg (I use large egg)
6 tsp. milk, room temperature
Instructions :
1. Place the walnuts on a lined baking tray in one layer. Bake in a preheated oven at 150'C/300'F, for 5 minutes. Remove from the oven. Let them cool down. Reserved 10 walnuts for garnish. Roughly chopped the rest. Set aside.
2. Increase oven temperature to 170'C/340'F.
3. Use a fork or spoon to mash banana. Set aside.
4. Sift cake flour, coffee powder, baking powder and salt. Mix well.
5. In a large bowl, mix melted butter and sugar. Stir in egg. Mix well. Add mashed banana.
6. Sift in the flour mixture in two batches. Pour in half of the milk between two additions. Lightly combine with a spatula. Beware not to over-mix. Lightly stir in the chopped walnut into the batter. Spoon evenly among the prepared paper liners. Put the whole walnuts on the surface for garnish.
7. Bake in a preheated oven at 170'C/340'F for 20 to 25 minutes. Remove from oven. Let cool on a wire rack. Serve while they are still warm.
