PINEAPPLE WALNUT BROWNIES

Ingredients :
280 gm chocolate Valrhona 66%
110 gm butter, melted
1 tbsp. Valrhona cocoa powder, sifted
80 gm brown sugar
2 large eggs, lightly beaten
1 tsp. vanilla extract
70 gm cake flour or plain flour, sifted
5 canned pineapple slices, drained and diced
80-100 gm walnuts, chopped
35 gm chocolate chips
Instructions :
1. Preheat oven to 180'C. Grease and lined a 8-inch square baking pan with parchment paper.
2. Melt chocolate, butter and cocoa powder over low heat till chocolate melted (but do not boil the chocolate) and stir in brown sugar and stir well again and remove from heat and allow to cool slightly. *** If melted chocolate is too hot, remove from heat before stirring in the brown sugar.
3. Gently fold in flour to just combined and Do Not over beat. Add in beaten eggs and vanilla extract, stir well. Spread chocolate batter into the prepared pan.
4. Sprinkle with diced pineapples over the top, followed by chopped walnuts and chocolate chips.
5. Bake in oven for about 30 minutes. After cooling, chill the brownies for at least an hour for easy cutting.
