APPLE MUFFINS

Ingredients :
125 gm cake flour or plain flour
1/2 tsp baking powder
1/2 tsp baking soda
1 large egg
85 gm caster sugar
65 ml corn oil
60 ml fresh milk
1 tsp vanilla essence
1 tsp lemon juice (optional)
1 red apple ~ peeled and cored, diced
Method :
1. Preheat oven to 180'C. Place 7 cupcake liners in muffin pan and set aside.
2. Combine egg and sugar together till sugar dissolved followed by lemon juice and vanilla essence with a hand whisk. Stir in oil and milk.
3. Sift the flour, baking powder and baking soda into the egg mixture. Drop in the diced apple and fold with a rubber spatula until well combined.
4. Spoon batter into muffin cups. Bake in oven for 25-30 minutes. Serve muffins with some dusted cocoa powder.
