KIWI MUFFINS

Ingredients :
4 Kiwi (medium size) ~ dice to 1/2 inch size, approximately 1 cup total
4 cups all-purpose flour
2 tbsp. baking powder
1 tsp. salt
1 cup granulated sugar
1/2 tsp. cinnamon powder
2 eggs (large) ~ slightly beaten
2 cups milk
2 tsp. vanilla extract
1/2 cup canola oil (I used vegetable oil)
Turbinado sugar for dusting (I used brown sugar)
Instructions :
1. Preheat oven to 400'F/200'C. Line muffin tins with paper cupcake liners. Set aside.
2. Sift flour, salt, sugar, cinnamon powder and baking powder in a bowl and mix well.
3. Beat together egg, milk, oil and vanilla extract in a large bowl. Slowly mix in the dry ingredients. Fold in the chopped kiwi.
4. Spoon mixture into a cupcake liner and fill them to the top. Sprinkle with the raw/turbinado sugar.
5. Bake for approximately 25 minutes. Muffins are done when slightly brown and a toothpick inserted into the center comes out clean.
