LEMON POSSET...

Ingredients :

225  gm  whipping cream 'dairy'
Zest from 1 lemon
65  gm  granulated sugar
45  gm  lemon juice
Yellow food colouring  (optional)
Fresh berries,  for serving  (I use strawberry & blueberry pie filling)


Method :

Remove the lemon zest from 1 lemon.
Put whipping cream, lemon zest and sugar into a saucepan.
Place over low heat and simmer it for 5-7 minutes.
Remove from the heat and pour the lemon juice into the saucepan.
Put the yellow food colouring into the saucepan and stir to combine.
Let it cool for 30 minutes.
Pour into cups/ramekins.  Refrigerate for at least 4 hours.
Place fresh berries over the top before serving.
