APPLE CRISP PANCAKES

Streusel Topping :
1/4 cup brown sugar
1/4 cup flour
1/4 cup oats
3 tbsp butter (45 gm)
1/2 tsp ground cinnamon
Pancakes Batter :
1 1/4 cups flour
1 tbsp sugar
1/2 tsp salt
1 1/2 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp nutmeg
1 egg (I use grade A)
1 cup milk
2 tbsp vegetable oil
1 cup apple, peeled and diced (about 1 apple)
Method :
1. Prepare the Streusel : In a medium bowl, mix brown sugar, flour, oats and cinnamon. Cut in butter using a pastry blender or fork until mixture is crumbly. Set aside.
2. Prepare the Pancake Batter : In another bowl, mix flour with sugar, baking powder, salt, cinnamon and nutmeg. Add egg, milk and oil. Mix until smooth.
3. Peel and dice apple and combine with pancake batter.
4. Heat a non-stick pan over medium high heat. For each pancake, pour 1/4 cupful batter onto hot pan. Sprinkle each pancake evenly with 2 tablespoons of Streusel mixture. You can press the Streusel slightly to stick better to the pancake. Cook for about 2 to 3 minutes or until bubbly on top and dry around edges. Turn and cook on the other side until light golden brown around edges about 2 to 3 minutes more.
5. To serve : Drizzle with maple syrup, honey, or top with whipped cream...
